Okay first, a quick update on my fitness goals in case any of my friends are wondering. I've continued training with Richard Blackman and I am getting close to some of my goals. I hope to have some cool things to share soon when I have accomplished some things I am working on. Who knows...I may even have some video to show...if I'm feeling brave. :)
But this post isn't about my training, it's about yumminess. :) Generally I'm too lazy to do more than eat fruit. The most complicated I get on a regular basis is fresh OJ or making a banana smoothie. I'm telling you, the fruitarian lifestyle was made for lazy people like myself who are happier peeling bananas and sticking them in my mouth than standing in the kitchen chopping things. But once in awhile, I will be struck with a little creativity/inspiration/whatever and then the following happens.
Noodles:
Zucchini, *spiralized
Sauce:
1 pint Nature Sweet Cherub tomatoes.
(I'm particular about the tomatoes I use if I make a sauce...they have to be excellent.)
1 ripe small to medium ataulfo mango
Fresh basil to taste
Diced yellow bell pepper to taste.
Directions for sauce:
**Blend everything but bell pepper. Pour sauce onto noodles. Sprinkle diced yellow bell pepper on top.
The mango gives this a lot of flavor and creaminess. You can also use OJ, it tastes fairly good but you will have to watch not to over blend or it will be watery.
**I find that when blending sauces, if you have a crappy old blender like mine, it is best to feel your way and gently pulse it, otherwise tomatoes tend to end up being frothy and bubbly in a sauce and that's just grosses me out. Of course if you have a Vitamix or comparable blender, or a hand blender, you will fare much better.
This is a variation of the tomato based sauce before it, and it's my favorite.
Noodles:
Zucchini, *spiralized
Sauce:
2 ripe mangoes
1 medium handful of Nature Sweet Cherub tomatoes
Fresh basil to taste.
Optional - diced red bell pepper to go on top.
Directions for sauce:
Gently pulse/blend until creamy and slightly chunky. Do not over blend.
I love this sauce because the mangoes make it so smooth, sweet and creamy, yet you still have a hint of tomato for tartness.
*A note about spiralizing zucchini and other fruits and veggies:
The spiralizer I use is called the Benriner Cook Help. You can find it on Amazon.com. It is pricey, but it is such a joy to use that it's worth it in my book. It spiralizes quickly and cleans up even more quickly. I don't do complicated, I barely make recipes and if I didn't have this handy little tool, I would probably never make zucchini noodles, ever. Here is a picture of it:

Those recipes both sound great! How did the kids like them? That's always my test.
I didn't offer any to my 3 yr old, but my 6 yr olds LOOOOOOVED both versions. They beg me to make it every day. I actually made it up for them in the first place. lol They're just fascinated with the fact that zucchini can magically become pasta. :)
I've heard that some athletes use zucchini as pasta for a simple low fat meal the night before a big event, with regular pasta sauce!
Hmmm....that looks really good. My 14 year old daughter (who has been vegan since she was ten) will love it.

Thanks for recommending a spiralizer.
I bought a Saladacco, never successfully got the hang of using it, then my kids got a hold of the tiny little blade attachment and lost it. Into the recycle bin it went. Grrr!
Recipe sounds yummy. I haven't tried it with mangos before, but I liked the mango tomato soup recommended in the 80-10-10 book, so I bet I'll love it. Hey, maybe it would be good with peaches when they come into season!
