The pictures aren't great because I was too lazy to set it up properly, but here's my "recipe" for making Not Pumpkin Pie.
Ingredients: 1-2 lbs medjool dates, 4-6 large ripe bananas, 5-6 ripe persimmons - preferably a jelly like variety.Step One - The Crust: Pit dates and press date halves all around the bottom of a pie plate.
Step Two - The Filling: Peel bananas, break them in half and place them in the plate, mash lightly with fork until bananas are even all over.
Step Three - The Topping: Scoop out persimmon jelly, spread evenly all over the top.
Slice, serve and enjoy! (Would probably taste good chilled, too!)
My husband loved this pie SO much that he said it was better than any real pie he's ever eaten. (And this guy LOVES his pie, I tell ya, so that was a pretty big compliment.) He has requested that I make it again at Christmas, and forevermore every Thanksgiving and Christmas season.
My kids ate it right up.
Things we liked about this pie:
1) Has only 3 ingredients
2) Took only 15 minutes to prepare, from start to finish.
3) Actually took longer to eat than it was to make. (Cooked pies take hours to make and seconds to eat lol.)
4) Is ultra low fat
5) Did not require heating or cooking.
6) Is super sweet but does not contain processed sugar or sweeteners of ANY kind.
What is not to like? :) Let me know how ya like it, if you try it!

Just wanted to say, I've been following your blogs for a while via Tracey's, and I just caught up on this one, and I'm really so inspired by your dedication to this. I wish I could do what you're doing, but I'm not there yet. I hate admitting it but I'm just too lazy to do all the research you do! However, perhaps I'll try to copy a few of your posted daily food intakes -- so I'll know I get the proportions right, since I'm just mooching off your research :) -- for a few days and see how I do. (Not look for "results" so much as see how I feel.)
Hey Sally-Anne, how cool that you're thinking of trying this for awhile! You can't go wrong if you eat as much fruit as you care for for breakfast, as much fruit as you care for for lunch, and for dinner - if you're very hungry, as much fruit as you care for followed by as much veggies as you care for. If not hungry, then just do the veggies for dinner. :)

We tried this recipe today, but not in pie form. I had 4 persimmons ripe and hungry children at lunch time. We sliced up a couple of bananas in a bowl, spread the yummy gel of a persimmon on the banana, and then chopped a couple of dates on top. We each had a bowl of your yummy pie. It tasted awesome. Definitely easy, quick, and sweet. Thanks for sharing!!!
I'm so glad you guys liked it, Sarah! My DH and kids are worried that there won't be any persimmons left by Christmas to make this again. If so, I will try mango puree instead, which is the original recipe I found.
When you put it that way, it does sound easy! I just have to remember not to overload on fatty stuff like avocados and nuts. For the dinner veggies -- can it be stuff like cucumbers and tomatoes, or does it have to only be leafies?
It sounds so odd to me to just sit and eat ten bananas in a sitting. But really, why not? I've always been too daunted by variety anyway. Simple is better!

I made this last night. Thank you so much!!! Yummy!!! Mine wasn't as low in fat, because I put pecans on the bottom....but YUM!
.....sorry I forgot to note. My persimmon are not jelly like, so I just removed the skin and mashed them with a potato masher. It made them jelly like :) If you worry about running out of persimmons, but you have access to them now..you can freeze them. My Dad has a tree and he freezes them to make persimmon cookies later.
